How to Make Khichda: Step-by-Step Instructions 

1. Prep the Dal and Wheat 

Rinse 2 cups of dehusked wheat and 1 cup of dehusked barley two to three times. Soak them overnight in sufficient water. If you're short on time, soak the mixture in hot water for at least 2 hours to soften. 

In a separate bowl, combine 1 cup chana dal, ¼ cup kala dal, ¼ cup moong dal, ¼ cup arhar dal, ¼ cup masoor dal, and ¼ cup rice. Rinse the mixture thoroughly and soak it for 1 to 2 hours. 

2. Cook the Dal and Wheat Together 

Transfer both the soaked dal and grain mixtures into a pressure cooker. Add 5 to 6 cups of water, 1 ½ teaspoons of turmeric, 1 ½ teaspoons of salt, and 2 teaspoons of oil. Pressure cook for 4 to 5 whistles or until the grains are soft and fully cooked. Once done, mash or blend the mixture gently to eliminate lumps.  

3. Prepare the Aromatic Ground Masala 

Grind 1 tsp of Cumin Seeds, 1 tsp of Coriander Seeds, 7-8 Cloves, 1 Black Cardamom, 1 tsp of Black Pepper, 2-inch Cinnamon Stick, and 8-10 Green Cardamom together in a mixer and grinder to form a fine powder. 

4. Cook the Mutton 

In a pressure cooker, heat 1½ cups of oil. Add chopped onions and sauté until golden brown. Stir in the spices and cook for 4 to 5 minutes over high heat until fragrant. Add the mutton pieces and sear for 10-15 minutes, ensuring the meat browns evenly. 

Pour in 2 cups of hot water, seal the cooker, and cook on a high flame until the first whistle sounds. Then lower the heat and let it continue cooking until the pressure releases naturally. Open the lid and ensure the mutton is soft and tender. 

5. Combine Mutton with the Base 

In a large, heavy-bottomed pot, combine the cooked mutton with the prepared dal and wheat base. Sear the mixture on high flame. If it becomes too thick, add a little hot water to loosen the consistency.
