What is Stuffed Khandvi?

Khandvi, also known as Patuli or Suralichi Vadi, is a steamed snack made using a smooth batter of besan (gram flour) and buttermilk. The batter is cooked and spread thin, then rolled and garnished with tempered spices. In the stuffed Khandvi preparation, we add a delicious coconut-coriander mixture inside before rolling, taking it to the next level!

For Tempering:

- 1 tsp mustard seeds
- 1 tsp sesame seeds
- 5-6 curry leaves
- A pinch of asafoetida
- 1-2 dry red chilies (optional)
Method
Prepare the Batter:
In a large mixing bowl, combine gram flour, sour yogurt, water, turmeric, salt, and hing. Whisk well to avoid lumps. Pour the mixture into a non-stick pan or use the Wipro 2000-watt Induction Cooktop for precision heat. Cook the batter on medium heat, stirring continuously to avoid lumps. The mixture should thicken into a smooth, spreadable consistency within 7–10 minutes.

Spread and Roll:
Take clean, flat steel plates or a large marble surface. Quickly spread the hot batter thinly and evenly using a spatula. Let it cool for 3–5 minutes until firm to touch. Spread the coconut-coriander stuffing gently over the entire surface. Cut into strips and roll tightly into pinwheels.
Tempering:
Heat oil in a small pan, add mustard seeds, and let them splutter. Add sesame seeds, curry leaves, hing, and dry red chilies. Pour the tempering over the rolled Khandvis evenly.
Garnish:
