So, without any further ado, let’s dive right in.

Recipe 1 – Muhammara

Originating from the Aleppo region in Syria, Muhammara is a dip made from red pepper. It looks very similar to hummus. It is a popular dish in the Middle East and is generally part of a festival feast.

This dish is loved by all and for a good reason. It has the zing from the pepper, and the silky-smooth texture goes well as a dip with any snack like a pita bread or a mezze platter. You can also serve Muhammara with some garlic prawns and stuffed mushrooms or use it as a base sauce for pizza to give it a middle-easter twist and flavour.

Ingredients needed

  • 3 red peppers
  • ½ cup toasted walnuts
  • 3-4 garlic cloves (roughly chopped)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ¼ cup bread crumbs
  • Salt as per taste

Method

  • Roast the whole pepper directly over an open flame; use a pair of tongs to rotate until it is charred evenly on all sides and becomes soft on the inside. Let the pepper cool and peel the skin
  • Now, put the pepper in a large mixing bowl, add all the other ingredients, and blend it until you get a smooth paste.
  • If you feel the mixture is too thick, you can add some more olive oil
  • Taste it and adjust the seasoning as you like
  • Transfer the sauce to a serving bowl, scatter some black and green olives around and enjoy
